About

Dr. Mohamed G. Farahat is an Associate Professor at the Faculty of Science - Cairo University, specializing in microbiology, biotechnology, and bionanotechnology. His work focuses on microbial enzymeproduction, biopolymer synthesis, and the development of innovativeantimicrobial and functional food technologies. With extensive experience inmolecular microbiology, enzymology, and nanobiotechnology, Dr. Farahat isdedicated to advancing sustainable biotechnological solutions with applications in healthcare, food safety, and environmental sustainability.

His research has led to significant breakthroughs in enzyme engineering, including the production of microbial enzymes for variousapplications and the biosynthesis of low-calorie sweeteners using engineered microbialsystems. In the field of biopolymers, he has contributed to the development ofbio-based antimicrobial packaging materials and novel exopolysaccharides withindustrial and pharmaceutical potential. His work in bionanotechnology exploresmicrobial-mediated nanoparticle synthesis, demonstrating promising applications in combating antimicrobial resistance and mycotoxin contamination.

Research Interests

•             Microbial Enzyme Engineering – Cloning, expression, and optimization of industrially relevant enzymes for food, pharmaceutical, and environmental applications.

•             Biopolymer Synthesis & Applications – Production of functional biopolymers, includingβ-cyclodextrins and exopolysaccharides, for food preservation and drug delivery.

•             Bionanotechnology – Microbial biosynthesis of nanoparticles for antimicrobial and antifungal applications, particularly in combating mycotoxins.

•             Functional Foods & Nutraceuticals – Biotechnological production of alternative sweeteners and prebiotics, enhancing food safety and human health.

•             Environmental & Industrial Microbiology – Utilization of extremophiles and marine-derived microorganisms for sustainable biotechnological processes.
