Melaku Tafese Awulachew is a chemical engineering by training and a Researcher of food processing technology at Ethiopian Institute of Agricultural research.

Melaku Tafese Awulachew is a Chemical Engineer by training and currently serves as a Researcher in Food Science and Nutrition at the Ethiopian Institute of Agricultural Research (EIAR). He specializes in Food Engineering, Food Processing Technology, and Nutrition, with a focus on developing nutrient-dense, functional complementary foods from underutilized cereals and legumes. His work leverages fermentation, advanced thermal and non-thermal processing, and the incorporation of probiotics and postbiotics to enhance nutritional quality, bioavailability, and food safety.

His research not only tackles micronutrient deficiencies and public health challenges, but also promotes the valorization of local crops, strengthens food security, and bridges the gap between scientific research, technology, and practical applications. Through this multidisciplinary approach, Melaku contributes to building sustainable food systems that improve health and well-being in Ethiopia and globally.
